An easy, delicious meal

This was pretty darn tasty and I had all the ingredients on hand. Since we went to the lake today I am super exhausted and this recipe was perfect. Something about the sun, swimming, and keeping spartacus from eating anything weird off the beach just takes all my energy. Plus, laundry day. Boooooo.

To gluten free or to not gluten free?

For awhile now I have been contemplating trying out a gluten-free diet.

On the lupus message boards there are a ton of people who either have a diagnosed gluten allergy/intolerance or have Celiac disease.  Also, did you know that those are not the same?  Before I started looking into this I thought Celiac disease was just a fancy name for gluten intolerance... then I became jealous since lactose intolerance didn't have a fancy name.  Now I feel better.

Back in 2006 an allergy panel was done on me by the wonderful doctors at Shriner's hospital in Spokane.  Gluten did not come up on the panel- unlike corn, dairy, and eggs.  Most of which, I ignore by the way.  The only one of those I notice to have ever bothered me is dairy, so I stick to small amounts of cheeses and Greek yogurt/Kefir and no milk.

Back to the point, there are others on the board who have neither of the above afflictions, but tried the gluten-free diet and stuck to it for the health benefits.  Since wheat is in damn-near everything here in the US (Go America!), eliminating gluten usually means cutting out processed foods, avoiding a large amount of baked goods, and turning down anything that's dunked in batter and deep-fried.

...anyone else hungry right now?  Anywho...

The result?  While avoiding all of those things, you're cutting out fats, sugars, and probably filling your plate a bit more with fruits, vegetables, and proteins.  Supposedly, you feel healthier, have more energy, and your digestive system is happier.

And who doesn't like a happy poop?

I'm gross, I make no apologies.  Just be thankful I didn't post a picture.

Plus, I could lose weight!  I've been a bit stuck in my weight loss goal, so the possibility of moving forward is appealing.

So, obviously I have a lot of things to ponder.  The first thing I did was very important to my well being and was the only first step I could have taken in this process:

I Googled gluten-free pizza.  I tried a polenta pizza crust once at a friend's suggestion and a part of my soul died.  There exists various gluten-free pastas that I can deal with (soba... mmmmmm), but if my pizza crust has a weird texture, an icky taste, or can't support a healthy amount of sauce, fresh mozzarella, and basil, then I can't hack this gluten free thing.  That picture looks pretty damn good, though.  I will have to experiment with various recipes at least once a week if I go through with this.

The next thing I did (which all people who aren't neurotic should do first) was I sent an email to my Rhemy.  Any change in diet or regimen should be cleared with your doc.  This is especially so, as he may want to run any tests for Celiac or gluten-intolerance.  Cutting them out ahead of time would mess up the tests, apparently.

So, until I hear back from my MD, my diet is pretty normal, as you will see in my WFD post tomorrow.  Tonight we're rocking one of those frozen Chinese-esque meals from Coscto.  Stuffed full of wheat and preservatives.  Maybe I'll even have a beer, just to enjoy my freedom now in case I happen to chose to walk down that path.

Updates!

This little lupie has been busy!  First, I'll do the lupus-related updates:

My blood work (and pee work, if we're being technical) came back from the most recent round of tests.  Everything looks better than it has in quite awhile, my rheumy was very impressed.  Other than some joint inflammation and my usual issues with the sun, everything is just peachy.

You saw my sweet shades from getting my eyes dialated.  My eyes are also doing just fine, no bad mojo from my plaquenil.  Also, I didn't get scolded for not wearing my glasses, so that was nice.

Physical therapy is going really well.  I've been rocking the pool twice a week for now but Don has also been sneaking in some pilates as well.  The stronger I get, the better.  

So, those are my lupus updates.  The other issue with being able to post recently had to do with my job.  Child welfare does not wait while you're on vacation, so I was very busy when I got back to the office.  In addition, I spent the time while I was on vacation pondering what direction I'm going to go with my life.  Volunteering isn't paying the bills and CalSWEC isn't going to count those hours towards payback any longer.  Part of why I've been so busy is that I'm preparing to leave my job, my cases, my kiddos.  It makes me sad, I'm not going to lie.  Plus, I am not a great lady of leisure.  Having nothing to do makes me depressed.

With all of this stress and the hectic-ness of these big decisions, work, and getting back from a long trip with family, the hubs and I are looking for a getaway.  Looking forward to a couples massage soon!

...for travel! Lupus tip of the day- make sure you rest up and don't overwork yourself before long trips. Travel already takes a lot out of you, don't ruin your vacation before it even starts!

Trout with Grilled Poblanos, Onions, and Corn

I am loving this new recipe, and the hubs approves too. It's just a handful of ingredients and grilling the veggies adds a really great smoky flavor.

MM! Chipotle Pesto Pasta!


This delicious dish is brought to you by my twin sissylala, Kayla.

Chipotle Pesto Pasta

Pesto :
1/4 7 oz can chipotle in Adobo
1/8 cup Parmesan cheese
1/4 cup olive oil
1/2 cup basil
1/2 cup cilantro 
3/8 cup pinenuts 
3/4 tbls kosher salt 
1/4 jar sliced sun-dried tomatoes
 -pulverize nuts, basil, and cilantro in a food processor.
-then add the peppers, tomatoes, oil, parmesan, and salt and pulverize again. 

6 oz of Cotija cheese
-Break into chunks and put into a food processor and pulse until well crumbled

2 tomatoes
Handful of Cilantro 
-Chop these and set aside for later

1lb pasta
6 oz baby spinach 
-In a large skillet pour about 1/4 cup water and the pesto
-With heat on low, add spinach and about a handful of cotija
-Cover and allow the spinach to steam
-Cook the noodles until al dente
-Drain noodles and then stir into the skillet mixture
-On plate top with ample diced tomatoes, cilantro, and cotija cheese

Great with crusty bread and a salad
